First Harvest

The radishes were done this week. They are a little on the small side, but they are delicious. They had to come out to make room for the spinach to finish growing before the heat hits and the spinach wilts. I pickled them with some herbs from the herb garden and now I have delicious pickled radishes for all my summer taco-eating needs. Yummy and pretty!

Pickled radishes are a delicious staple of many Mexican meals. They are really good along with spicy tacos and stews. They are traditionally pickled with carrots, onions, and/or jalapeños. I highly recommend them if you like pickles or spicy food.
